I'm not sure of the exact number of players (6, 7 or 8+) but the standard maps are automatically set to large with a certain quantity of players, and can't be reset to small.
This may not apply to non-ES maps and Scenarios.

I've been playin' the small maps because there seems to be more of a challenge at doing things more quickly because of the smaller area and lack or resources. I find the smaller maps make you 'work' harder at getting your eco up and defence running at the same time as building an army to attack with. The larger maps seem to drag onward and last longer with more resources to obtain making it less of a challenge.
Because I asked all of you your opinion I thought it only fare to share mine, too.
