When you can spare the resoureces, have at least a Migdol at each gold mine. If a TC is near by that's a bonus because mercenaries can help counter a raid. If not, garrison as many villies as possible, make the others run, and either make counter units at the Migdol or bring some of your already made units over. If they don't flee after 15s or so, then it's not really a raid, and you should be able to take most of them out, meaning more damage to him than you.
Place walls in strategic places - don't surround the mine, but maybe blocking an open entrance, or maybe on the side that leads back to your base (with a gate) so you can escape through there and they can't follow. Don't upgrade walls more than once - if you can afford it, you should be spending those resources elsewhere, or you've already won.
