On a land map, always send you first 3/4 vills to food and research hunting dogs when many hunt is available. Scout with your scout, set your TC on autoque, get some vills to wood/gold then build temple and house and rest to food. That will make you advance decently enough. Of course this changes for every civ and strat you are doing, when you are rushing, you may want all your vills to food for early advance or when you are booming, you do more vills to gold/wood and research eco ups.
Rule of thumb is to never turn of autoque of your TC.

After quickly losing some games on Moderate, I think I finally figured out what's my problem. Apparently, I just can't get enough resources to keep training villagers, and at the same time build an army, and still have the time and resources to build houses and a temple.
Another thing is, that I still haven't figured out what civilisation is best for me. I tend to have a defensive nature, I want to build walls around my village/city. Then when I'm in the Mythic Age, I start building an army to raid some other players occasionaly.
With the Norse, I have a too small army (so I have a lack of builders either).
With the Atlanteans, I use all of my resources to get enough villagers. I rarely end up with an army at all.
With the Egyptians, it takes me a long time to get what I need, and by the time I have an army, it gets beaten really fast.
With the Greeks, most things start out fine, but I yet again, lack an army, resources and other necessary things.

How much vills should I have? I generally try to get 5-7 on wood, 6-8 food, and 6-7 gold. When I just start out, I try to have 3 on every resource.

8 villies will get you a pretty constant age 2 speed, I usually put 8/7 to food, then wood and gold

You cannot do the same build order every game though once you're good enough. Remember that.

max villagers is a must, in a long game you will want about 80 civilian units by the end
and Arus_II is right, watch lots of recorded games

I have enough of everything now, but I'm still low on gold every now and then. Training extra dwarves (when I'm Norse) doesn't help either...

lol? It has nothing to do with this. You just want to put on as many as you will need, not a specific number although these are good guidelines but only for lategame imo. For example, as Norse when you hit Classical you almost always have a lot on food (7-11 [depends on which god really and I am talking about land maps here]) and then as soon as you hit Classical you almost always aq dwarves to gold until you have 9-12 or so (somewhere in there). Then you either go back to food or wood. The only time where I don't automatically send a lot to gold is when I have to make a lot of TA instead of RC or Hersir.
As Eggy (this is typical fh here) you want like 6+ on gold through Classical but not too many and then when you cast prosp put as many on gold as you can without having a shortage of other res gatherers that will result in a shortage of something. Near the end of Eggy Classical you want to put more on wood or as soon as you hit Heroic put a ton on wood as you will almost always be massing CA and Siege Towers which are 100 and 200 wood apiece respectively.

I like to keep focusing on food and gold,
I have found Elephant / axeman spamming extremely effective recently
especially with the Thoth upgrades

Well what I would do is choose a pantheon, that way we can give you a few more specific tips. After you got the hang of it I would choose a specific god and become an expert at him. That doesn't mean you will always have to play him but it helps to have a specialty pantheon/god. Also, like other people mentioned a few recorded games would help because maybe your doing something totally wrong that just comes natural to us.

Ok. You should never really have over 25 miners at any point in the game though due to the fact that at the time this becomes even possible you should be starting your trade (which is ASAP in heroic always).

Trade ASAP ? I doubt that. Really depends on game. Caravans are less efficient then villagers. You should not have the eco
to effort caravans when you get herioc as eggy.

Yes, I said "ASAP" which stands for "as soon as possible", possible being the key word here. You should always put your markets up immediately and then start trade as soon as you can without it affecting the rest of your eco negatively.

Trade is slightly better to get up than eco ups but I just grab everything eco oriented that I can before I grab military ups that I don't need atm.

In Heroic I usually don't even make many phants, just CA, siege towers and a few phants. I am also just about camel-free 11. Once you hit Mythic you should immediately buy Valley of the Kings, Flood Control, an Coinage. From there buy what best fits the situation.

So before you spend all your precious food on ellies and trade you should get to mythic? Now I just wait till I get all ups, 1 migdol CA spam and 1 ellie spam and then when I have my farming up and running, I try to go mythic...

Ummm, no. Get trade as soon as you can in heroic, already said that. You may need a few phants in your army before you hit mythic and you should be able to afford them at least in late heroic, only a few in early heroic if any at all. CA are much better to mass at this point. If you have the gold but not the food yet I'd put down another mig close by to either secure another gold mine or TC or to just get units out faster. Remember you want to have your resouces as close to zero as possible while gathering as many resouces as you can at the same time while not wasting any resources. Just go Mythic when you can afford it basically.
When I am vs a god that can rag and they are in heroic and I can not get Mythic as soon as I'd want to due to a lack of food I like to spend excess gold on throwing down walls, towering my TCs, trade route, and forward migdol area as well as putting down rax and upping my axemen if I can just in case he gets Mythic sooner than I hope.
