Hey Bar I'm in the same boat buddy, although lately I've been getting significantly better than the rate at which I used to. I'm not medium enough to give you concrete strategies, but I can give you some tips (you may already know some of these):
Bolt is good to use for a big animal that attacks during hunt, enemy scouts, enemy villager building temple to advance, enemy myth unit after advance, and enemy hero after advance.
Ceasefire is good for easily taking a settlement close to your opponents base while building barracks to spawn hoplites, good for taking the enemy's town center, good if you don't have military in your base and it's getting attacked.
Also if you play as hades, and quickly claim a town center close to the enemy base, you can sentinel it to protect it and spawn archers. Don't forget to always research Vaults of Erebus at your storehouse asap too.
Remember as Greek you have the best scouts in the game, so raiding their food villagers with your horse can work sometimes. And don't be afraid to make 2 or 3 Pegasus to help you with scouting. Those things will reveal the map for you in no time.
