ok, i know that catapult/petrobolos/ballista will be able to force-fire, but will a normal unit be able to? ex: you have hit max pop and you want to build a unit without waiting for the enemy to kill it, can you just bring another guy over and slaughter him?

Just select the unit and hit the "delete" key on your keyboard.

There's no friendly fire in AoM.
If you don't want sheep, so what? They don't take up pop or anything.

"Force fire" in AoM is intended to surpress the enemy forces.
That is, let's say that you've got this fast-moving group of infantry coming down a pass and you've got no way of hitting it with catapults. Just press "Attack Ground" (which is Force Fire in AoK-ish), and aim at a point in front of them. By the time they reach that point, if you aimed correctly, the rocks from the catapult should rain down on them . It works for me, at least!
Also, you can destroy the enemy's animals that way, as animals killed by military units (I think) do not produce food for some reason

It's a moot point in AoM though, since siege weapons do almost no damage at all to regular units.

Eagle - Are you sure they don't produce food? In the demo, I killed some deer near the enemy and then I saw some villies come up and start to harvest from them...
TSD - Really? In the demo a Petrobolos seemed to be doing quite a bit of damage to my archers, but maybe it was just me...
He kicked me in the back when i wasn't looking, so I kicked him twice in the face when he was.
