I may have missed something here, but most AoM buildings have variations, either from age upgrades or other technologies.
But if what you mean is you want to have a standard building and then keep it, but add to it over ages/techs, what you need to do is:
1) Import the original building into a modelling application (I use gmax so if you use another modelling tool that has a different way of handling attachpoints you will need to figure it out).
2) Create your additions using the same attachpoint as the original - the diamond shape in the model (show bones) - but keep them as discrete models.
3) Define the additions in the prequel of the anim (just like define dust), but use TechLogic of none/specific tech, with none always being visualnone.
What I mean is you could have 20 attachments and depending on each tech thay could be something or nothing.
4) In the actual action anim (idle, death,etc.) attach all 20 (or whatever) attachments from (3) - remember you may be attaching nothing if the tech/age has not been researched, but that doesn't matter.
The result is you could have a basic building with towers, walls, guards or whatever being added over time.

A thank-you guarantees all future questions get answered (well at least looked at).
.... and building buildings in AoM/Gmax/whatever is a lot cheaper than Lego!!! .. and a very unexplored area of the game.
