testing in SoM will never be correct, since it assumes there's no pathing issues, and that there is always focusfire, etc. It'll be more accurate if you test it out in the editor instead.

When you have a gold mine or you have trade going,gold is easy.
Food is not as easy as gold.
Food is the slowest resource to get in.
Any cavalry or anti cavalry will need food.
In the food/gold anti cavalry need more food than cavalry.
So for one player want to play cavalry,he mostly feel gold is short but for anti cavalry civ like egypt,food is always short.

you also have to remember that in late game food is very easy to come by, and while gold is too, food comes in faster when you have all farming upgrades (I could be wrong, but I think this is the case). So, from classical all the way to early mythic gold is more of a "trash" resource, but after that, food is definately easier to come by.

Although most of your results are totally wrong I agree with you that cavalry, or atleast jarl, counters should be improved. I play Isis, and it really bothers me that I don't have anything to counter jarls effectivly with.
