Greek has two different letters for the E sound. Epsilon (which uses the character E) is a soft e, like in "elephant." Eta (which uses the character H) is often translated as an e, but is actually a hard A, like in "age."
Hoplites, Lampades, Toxotes and Socrates for that matter all use eta in the final syllable. So the best guess at pronuniciation (remember the modern Greek is different from ancient Greek, so there is still a lot of guess-work) is hop-lit-tayz, lam-pu-dayz, tox-oh-tayz, sok-ra-tayz.
As someone pointed out, pronunication is easy to get lost in translation, so in English you hear hop-LIGHT, which is how my dictionary pronounces it.
