Something else to consider:
Dwarves cost gold. As Thor they cost 10 less gold per dwarf. Also, dwarves gather gold faster than gatherers.
So, dwarves cost 15 resources more than gatherers. However, when tasked on gold they gather .2 (well, .19, but close enough) gold more, per second, than a gatherer. This means that in 1 minute 15 seconds, they've paid for their extra cost.
The other factor is their 16 second build time, compared to 14 for gatherers. Let's assume the food source is herdables/berries/chickens, because hunting isn't always available. Both the dwarf and the vill gather .73 food per second. This means that after the first gatherer is made, the non-all-dwarf guy (we'll just call him non-D) gets an extra 1.46 food. After his second gatherer, it's doubled (as DaP said), at 2.92 food. So, if they both made 20 vills, non-D would be ahead by, get this, 306.6 food. HOWEVER. non-D has completely nullified this bonus because he has to spend all that food on his gatherers.Now. As mentioned above, the Thor dwarf pays for his extra 15 res. pricetag after 1 min 15 seconds. (meaning that, after 1 min 15 seconds, you start making a profit from the dwarf's faster gold gather rate.) This profit is obviously nowhere near 306.6, however this does NOT need to be spent on more dwarves, so it's pure bonus resources.
Then there's the fact that, because you're not spending food, you actually don't need as many villies to advance. If you make 16 dwarves, you'll have an identical advance time, and your eco won't take that much of a hurting.
In classical, however, things start to go downhill. All the upgrades just make dwarves worse off at food and wood than gatherers.
MY VERDICT: (wether it's accurate or not, lmao)
I think an all-dwarf Archaic build is fine as Thor. You don't get set back all that much because you're not spending any food (and you get 250 starting food, so you barely need any food dwarves ). But in Classical, you should shift some gold dwarves to food temporarily, and start an all gatherer build from there. You simply send all the gatherers to food and gold, and whenever you need gold you simply send food/wood dwarves to gold. So eventually all 16 of your dwarves are on gold
