Personaly I would love to see an Aztec civ, thatd b really cool! you could sacrifice people for favor and all the gods and myth units would be very interesting, loads of death related ones. Would someone plz made an Aztec civ mod!?

Don't worry about this man, AoM will be a ghost town as of the seond half of 2005 (AoE 3) but I would have liked to see like Chinese or something, I kno they weren't in the picture really, but they were cool!

Both the Aztec and the Chinese are too far from the Age of Mythology game-map, which consists mainly of Europe and Egypt. Are the Chinese expected to travel across Asia or something? The Aztecs across the Atlantic Ocean?

AoEII with the expansion had civilizations from all across the globe, so why couldn't AoM? I am just hoping that there will be a AoMII in the future perhaps with some new civilizations.

I don't think theres gonna be an aomII. There just aren't enough civilisations with mythological history/multiple gods.

In part because AoK civs were largely the same with just a few differences, while AoM civs are completely different. It is much more difficult to balance the AoM civs.

True, it would be harder, but that certainly doesn't mean it can't be done. Balance has nothing to do with fitting them in with the other civilizations, however.
As far as not enough civilizations to warrant another game, that's not necessarily the case. There is the Roman (I know basically the same as greek but there could be enough differences to make it work), the Finnish, various Native American Pantheons, Indian, Chinese, and who's to say they couldn't reuse the current ones, just update and change them around?
I don't know if there will ever be a AoM 2 but I recall seeing ES talking about the "Age of Mythology series of games" in an article about AoE3. Did they mean AoM and the expansion, or were they hinting around about a future game? Only time will tell...
