You should have more villes than that on gold and wood by the time you advance, and as soon as you advance you should be making pure archers (double archery ranges). Building forward in the beginning vs loki is a bad idea because you're giving him the opportunity to get free myth units. Making archers can deal with those hersirs so that they can't get close enough to attack. Once you get some decent archers and find yourself pushing, that's when either the stable and/or military barracks goes up, so you can lessen the archers and start making hippikon/hoplites to deal with raiding calvary. Save archers for hersirs and defending general food areas. I almost always go for pestilence too because pest + Cyclops + archers + hero can be a great push to get him away from you early game. Some people say save pestilence for late game but vs loki in my opinion do it.
Also as tempting as it may seem, don't bring all of your food villes over to deal with one ulf building a temple near your base. You also still had your scout. One ville + scout is plenty.
Pegasus are more useful than you realize too, never realized it myself until I started making them. Vs. norse is great since they build on the go and you can know almost instantly what and where they're building.
